Coconut Cake with Choco Spread

 
 
Does this happen to you too, soon after the meal you have a specific craving for something sweet  : )
It’s either a toffee or any piece of some sweet meat, well I had neither but I had all the baking stuff and the strong longing for it so I ended up baking this delish cake.
 
 
 
Very easy and quick, was ready in 25 minutes, mixed ingredients of all cakes :)
I just took pictures as it was still hot, no fancy decoration but enough to make way to my mouth and tummy :)
 
 
You need these things:
 200 g Flour (nearly 2 ¼ cups)
3 eggs (m)
1 ½ tsp baking powder
125 g sugar
50 g soft butter
20 ml oil
175 g double cream (nestle the thick one)
2-3 tbs yoghurt
¾ cup desiccated coconut
200 g bar of plain milk chocolate
 
 
*melt the chocolate bar on a slow double broiler, stir to avoid lumps and let aside
*beat the eggs foamy and fluffy, add the sugar and beat till smooth
*add the cream, oil, butter and yoghurt and beat all, it will form a cream batter
* sift the flour together with the baking powder and add slowly and keep beating
*the batter will seem a bit thin but should look like that
*add the coconut and fold with a spatula
*grease a  9” pan and dust with flour
*pour out the batter onto it and bake in a preheated oven on 170° around 25 minutes
* as you take it out drizzle the choco spread on it with a small spoon so the cake doesn’t get any dents
*sprinkle coconut on the top and there you have your sweety sweet after your Lunch :D
